Deliciously Moist Whole Wheat Banana Bread

Today, I want to take a moment to celebrate the sheer deliciousness and comforting nature of banana bread—a simple yet decadent pleasure that never fails to lift the spirits.

Ingredients
  

  • 1/2 Cup Butter melted
  • 1 Cup Sugar (can use honey or maple syrup)
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1.5 Cups Whole Wheat Flour
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 1/2 Cup Sour Cream
  • 1/2 Cup Walnuts chopped
  • 1-2 Tsp Cinnamon
  • 2-3 Overly Ripe Bananas

Instructions
 

  • Preheat oven to 350°F
  • In a large bowl, mix butter and sugar. Add eggs and vanilla and blend well.
  • In a separate bowl, combine flour, baking soda, and salt.
  • Combine the dry ingredients with the wet ingredients.
  • Fold in the sour cream, walnuts, bananas, and cinnamon.
  • Grease a loaf pan, or use parchment paper to line the pan. Spread the mixutre evenly in the loaf pan.
  • Optional: Add brown sugar, oats, and/or more nuts to the top of the loaf.
  • Bake at 350°F for 60 to 80 minutes. At the 60 minute mark, use a toothpick to pierce the center of the loaf, if it comes out clean, it is done.

Notes

  • This loaf freezes very well.
  • Store wrapped in a tea towel for the first 24 hours, and in plastic wrap or a ziplock thereafter.
