Deliciously Moist Whole Wheat Banana Bread

Today, I want to take a moment to celebrate the sheer deliciousness and comforting nature of banana bread—a simple yet decadent pleasure that never fails to lift the spirits.

- 1/2 Cup Butter melted
- 1 Cup Sugar (can use honey or maple syrup)
- 2 Eggs
- 1 Tsp Vanilla Extract
- 1.5 Cups Whole Wheat Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 1/2 Cup Sour Cream
- 1/2 Cup Walnuts chopped
- 1-2 Tsp Cinnamon
- 2-3 Overly Ripe Bananas
Preheat oven to 350°F
In a large bowl, mix butter and sugar. Add eggs and vanilla and blend well.
In a separate bowl, combine flour, baking soda, and salt.
Combine the dry ingredients with the wet ingredients.
Fold in the sour cream, walnuts, bananas, and cinnamon.
Grease a loaf pan, or use parchment paper to line the pan. Spread the mixutre evenly in the loaf pan.
Optional: Add brown sugar, oats, and/or more nuts to the top of the loaf.
Bake at 350°F for 60 to 80 minutes. At the 60 minute mark, use a toothpick to pierce the center of the loaf, if it comes out clean, it is done.
- This loaf freezes very well.
- Store wrapped in a tea towel for the first 24 hours, and in plastic wrap or a ziplock thereafter.
